I found this recipe online yesterday (I wish I could find it in my history to credit them) and it's seriously YUMMY.

- preheat oven to 325

- 2 packages cream cheese (softened)
- 2 eggs
- 1/2 cup sugar
- 1 teaspoon vanilla
- graham cracker pie crust

Beat cream cheese, eggs, sugar, and vanilla in a large bowl. Pour into pie crust. Bake for 55 minutes.

When I first pulled it out of the oven, the middle had raised quite a bit and concerned me. But it fixed itself as it cooled. It tastes just a titch on the custard side but it is sooooo good! My hubby and boys loved this cheesecake and ate the whole darn thing last night. I have to make another one today!
